Canoes are displacement hulls not for planing. Anything bigger than 6hp and it will flip over once on plane.

I’ve done a few. This is a pirogue someone ran over so I cut it down to where it was good. Moved seat forward to get good balance, put foot rest in and built transom. It’s fiberglass so I made a plywood transom and screwed it in from sides, this is the transom mold wall and I put wax paper on it before screwing it in. Then I glassed it in with stitch mat and use a piece of pvc to roll glass over for top. Did an aluminum canoe 30 years ago. Didn’t have a welder so I got a scrap of aluminum and cut it out shape of back. I then marked 3/4” line inside canoe all the way around and used 3” wide welding pliers to fold aluminum in. I bent just a little at a time and went around probably 4-5 times to get it 90 degrees and perfect. I then put plate inside and drilled holes all the way around. I used 1/4” stainless bolts because I had a pile of them. I removed plate cleaned all holes then put a generous bead of silicone and screwed together. Good if you have helper and cordless drill with socket and clutch to set on about 8. Didn’t have that 30 years ago. This would be how I’d do plastic one also except you would make transom plate 1” larger everywhere and bend towards front. That boat still in service today and hasn’t leaked yet.
